Culinary Arts Specialist

This program consists of the following two courses:

1- The Professional Cooking program - 1470 hours

2- The Market-Fresh Cooking program - 525 hours


The Professional Cooking program prepares students to practice the trade of professional cook. Professional cooks will acquire the knowledge, ability and attitude necessary to prepare the implementation and work plan for service, plan the necessary elements for smooth service, apply hygiene, food safety, and occupational health and safety standards, prepared meals, soups, meat, fish, vegetables, sauces, desserts and other products, in accordance with specific procedures, create menus for various meals and table d'hôte menus, a la carte items and buffets. The Market-Fresh Cooking program prepares students to practice the trade of professional cook. The student will learn to develop their professional practice, make charcuterie products, make certain types of bread, make international dishes, make dishes using regional products, prepare dishes desserts, develop recipes, standardize recipes, do the establishment for and serve market- fresh menus and to do setting up for and serve tasting menus.


Skills you will learn:

  • Blending a range of ingredients and food types
  • Different styles of international cooking
  • Professional skills to work in or start up your own food related business
  • How to make charcuterie products, bread making, dessert creation, and preparing a variety of dishes using local and international ingredients
  • Recipe creation
  • Creating market fresh menus and readying a professional kitchen for service

Admission Requirements: 

  • Eighteen (18) years of age or older

  • High School Diploma (Equivalent to Grade 11) 

  • The English languages proficiency 

The language test is NOT required. However, your level of English must be equal to IELTS 5.5 to be admitted in the program.


Required Documents:

  • Copy of your high school diploma and transcripts; 

  • Copy of any post-secondary diploma/degree and transcripts; 

  • Copy of your birth certificate; 

  • ID page of your passport, 


Visa Process:

This important stage can be done either by yourself or by an Immigration Lawyer (or an ICCRC Member). In both ways, STAR can help you out!
